Millbrook Mushroom Egg Scramble
Ingredients
1⁄2 lb Millbrook Mushroom Blue Oyster Mushrooms, diced
4 eggs
2 tbsp milk (optional)
2 tbsp butter
1 spring onion (or shallot)
1 red pepper
1 cup of spinach
Preparation
In separate bowl, whisk together eggs. If you like lighter, add milk. Salt and pepper to season
Melt butter in sauce pan on medium heat.
Add spring onion and red pepper. Saute for a few minutes until soften
Add blue oyster mushrooms and saute until softened and reduced in size
Add spinach until wilted and soft Add eggs and stir until fully cooked
Add salt and pepper to your liking
