Millbrook Mushroom Egg Scramble

Ingredients

1⁄2 lb Millbrook Mushroom Blue Oyster Mushrooms, diced

4 eggs
2 tbsp milk (optional)
2 tbsp butter
1 spring onion (or shallot)
1 red pepper
1 cup of spinach

Preparation

  • In separate bowl, whisk together eggs. If you like lighter, add milk. Salt and pepper to season

  • Melt butter in sauce pan on medium heat.

  • Add spring onion and red pepper. Saute for a few minutes until soften

  • Add blue oyster mushrooms and saute until softened and reduced in size

  • Add spinach until wilted and soft Add eggs and stir until fully cooked

  • Add salt and pepper to your liking
