Millbrook Mushroom Holiday Quiche
We love using our Oyster Mushrooms when making our Holiday quiche. Simple to make and you can make ahead of time, warm up and serve.
Ingredients:
Pie Crust
1/2 lb of Millbrook Mushroom Oyster Mushrooms
1 cup baby spinach
1 Shallot
Olive Oil
Favorite seasoning for vegetables
Favorite mustard
1 cup heavy cream
3 eggs
1/2 cup Muenster
1/2 cup Cheddar
Salt & Pepper
Other ingredients to consider for filling: Red Pepper, Broccoli (don’t sauté but rather chop into small pieces), Sausage, Canadian Bacon, Shredded Hash Browns, Ham, Bacon….pick whatever ingredients you like!
Any pie crust. Place in pie plate. Warm oven to 400 degrees. Bake shell only for 4-5 minutes. Let cool and spread your favorite mustard along bottom of pie crust. Reduce oven to 350 degrees.
Next, sauté Millbrook Mushroom Oysters with shallots (we also sometimes add a garlic clove - optional) in olive oil with any seasoning of choice. If using red pepper, add with the mushroom & shallots to sauté all together. Next, add the spinach to soak up the flavors of your mushroom medley. This will be your filling.
Shred 1/2 cup muenster and 1/2 cup of cheddar cheese.
Put mushroom and onion medley in bottom of pie shell. Layer on top any other filling ingredients mentioned if you would like. Sprinkle cheese on top.
Whisk 1 cup of heavy cream with the 3 eggs, along with salt and pepper. Pour over ingredients in pie shell.
Cook 45 minutes to an hour. Serve warm or make ahead, chill and serve warm when ready. Enjoy
