Lion’s Mane Vegetarian Crab Cake
Ingredients
½ lb Millbrook Mushroom Lion’s Mane shredded to resemble crab
1 large egg
Large sleeve of ritz crackers crushed
½ cup mayo
1 tbsp Dijon mustard
1 tbsp of lemon juice
1 tbsp of old bay seasoning
2 tbsp of fresh chopped parsley
¼ cup cup of butter (prefer Kerrygold)
Preparations
Mix all wet ingredients and seasonings together
Add Lion’s mane and ritz crackers gently by folding into wet ingredient mixture
Cover and refrigerate for 30 minutes to allow moisture to absorb into crackers
Heat butter in non stick skillet on medium heat.
Cook patties for a few minutes on each side till brown and crispy
Place on plate and serve with remoulade sauce
