Lion’s Mane Vegetarian Crab Cake

Ingredients

½ lb Millbrook Mushroom Lion’s Mane shredded to resemble crab
1 large egg
Large sleeve of ritz crackers crushed
½ cup mayo
1 tbsp Dijon mustard
1 tbsp of lemon juice
1 tbsp of old bay seasoning
2 tbsp of fresh chopped parsley
¼ cup cup of butter (prefer Kerrygold)

Preparations

  • Mix all wet ingredients and seasonings together

  • Add Lion’s mane and ritz crackers gently by folding into wet ingredient mixture

  • Cover and refrigerate for 30 minutes to allow moisture to absorb into crackers

  • Heat butter in non stick skillet on medium heat.

  • Cook patties for a few minutes on each side till brown and crispy

  • Place on plate and serve with remoulade sauce
